1 tbsp apple cider vinegar (for brightness)

Optional: Chopped flat-leaf parsley for garnish

Instructions

Preheat your oven to 350°F (175°C). Prepare a baking dish by greasing it lightly or lining it with parchment paper for easy cleanup.

In a large mixing bowl, combine the ground beef, breadcrumbs, finely diced onion, grated carrots, minced garlic, milk, beaten egg, oregano, salt, and black pepper. Thoroughly mix with your hands or a wooden spoon until all ingredients are evenly incorporated.

Transfer the meat mixture to the prepared baking dish and shape it into a loaf, ensuring an even thickness throughout for consistent cooking.

In a separate small bowl, whisk together the honey, ketchup, soy sauce, and apple cider vinegar until smooth. This glaze will bring a delicious shiny finish to your meatloaf.

Pour half of the glaze over the meatloaf, spreading it evenly across the top and sides. Set aside the remaining glaze for later use.

Place the baking dish in the preheated oven and bake the meatloaf for approximately 50-60 minutes, or until an instant-read thermometer inserted into the center reads 160°F (70°C).

Within the last 10 minutes of cooking, take the meatloaf out and brush the reserved glaze over the top to enhance flavor and create a beautiful caramelized finish.

Once cooked, remove the meatloaf from the oven and allow it to rest for about 10 minutes to let the juices redistribute, making it easier to slice.

Using a sharp knife, slice the meatloaf into even portions. Serve while hot, garnished with freshly chopped parsley for a pop of color and flavor, if desired.
