  • In a medium mixing bowl, take the Greek yogurt and stir in honey or maple syrup (if desired) along with the vanilla extract. Mix well until creamy.
  • In individual serving glasses or bowls, add approximately 1/3 cup of the sweetened yogurt to the bottom of each container.
  • Spoon a generous helping of mixed berries over the yogurt, followed by a hearty sprinkle of granola. Continue layering until the glasses are filled.
  • Crown your parfaits with a few extra fresh berries and a sprig of fresh mint.
  • Place the finished parfaits in the refrigerator for around 10-15 minutes before serving.
