Rinse the mixed berries gently under cold running water. For strawberries, remove the green hull and slice them into halves or quarters. Pat the berries dry with a paper towel and set them aside.
In a medium mixing bowl, take the Greek yogurt and stir in honey or maple syrup (if desired) along with the vanilla extract. Mix well until creamy.
In individual serving glasses or bowls, add approximately 1/3 cup of the sweetened yogurt to the bottom of each container.
Spoon a generous helping of mixed berries over the yogurt, followed by a hearty sprinkle of granola. Continue layering until the glasses are filled.
Crown your parfaits with a few extra fresh berries and a sprig of fresh mint.
Place the finished parfaits in the refrigerator for around 10-15 minutes before serving.
