In a separate bowl, whisk together the pure maple syrup, melted coconut oil, and vanilla extract until smooth.
Drizzle the wet mixture over the dry ingredients. Stir vigorously until all dry ingredients are coated.
Transfer the granola mixture onto the prepared baking sheet, spreading it out evenly. Press down gently with a spatula.
Bake in the preheated oven for 20-25 minutes, stirring halfway through for even browning.
Allow the granola to cool completely on the baking sheet to firm up.
Once cooled, break the granola into clusters and fold in the dried cranberries or raisins if using.
