Instructions
Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish with butter or non-stick spray to prevent sticking.
In a large mixing bowl, combine the sliced apples with fresh lemon juice and 1 teaspoon of ground cinnamon. Toss thoroughly to ensure the apples are evenly coated. Spread the seasoned apple mixture evenly across the bottom of the prepared baking dish.
In a separate bowl, use an electric mixer to cream together the softened butter, packed brown sugar, and granulated sugar. Beat until the mixture is light and fluffy, which should take about 2-3 minutes.
Gradually add the all-purpose flour, baking powder, baking soda, salt, and pure vanilla extract to the butter and sugar mixture. Mix on low until all ingredients are well combined, resulting in a thick and cohesive batter.
Carefully spoon the batter over the apple layer, using a spatula to gently spread it evenly to cover the apples completely without disturbing the fruit underneath.
In a small bowl, mix together 1 tablespoon of ground cinnamon and 1 tablespoon of granulated sugar. Evenly sprinkle this sweet cinnamon mixture over the top of the batter for a delightful finish.
Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Keep an eye on it toward the end of baking to avoid over-browning.
Once baked, remove the cobbler from the oven and allow it to cool for about 10 minutes before serving. This will help it set and enhance the flavor.
